This evening I busted out some skate wings for din-din. Scampi style. I sauteed them in some olive oil, butter and chopped garlic and then finished them with chopped parsley and fresh lemon juice. Skate wings are excellent — nice, mild flesh and no bones to deal with. I maintain that they are great for kids since the worst that’ll happen is they’ll ingest cartilage. Your kids won’t eat skate wings? Not my fault if people are turning out other people who’ll eat only white rice and fish sticks, but you reap what you sow in this regard. I say expose ‘em to all kinds of food at an early age. Get that influence in before they start school and meet all those terrible Wonder kids. My crew will eat just about anything.
